Makes: 1 cup Chia Raspberry Jam INGREDIENTS 2 cups (320g) frozen raspberries (or berries of choice) 2 tbs chia seeds 2 tbs maple syrup or raw honey (optional) 2 tbs filtered water 1 tbs coconut oil 1 vanilla pod, insides scraped out or 1/2 tsp vanilla extract Serve with yoghurt, porridge, as a layer in Parfait (see page 249) or use as a pastry filling. INSTRUCTIONS In a small saucepan combine all ingredients, place over medium heat and bring to the boil. Turn heat down and simmer for around 10 mins, stirring through occasionally. Prep time: 5 mins. Cooking time: 30 mins. Makes: 1½ cups Rhubarb Compote INGREDIENTS 1¼ cups (150g) rhubarb, cubed 1 medium-sized red apple, peeled, cubed 10 dried apricots (sulphur-free), finely diced 1 vanilla pod, insides scraped out or 1/2 tsp vanilla extract 2-3 cups (500-750ml) filtered water 2 tbs maple syrup or raw honey INSTRUCTIONS Place all the ingredients except the honey in a medium-sized pot and cover with filtered water. Place over a medium heat, bring to the boil, reduce heat and cover with a lid. Simmer until water is evaporated. Add more water if necessary. The more you reduce the compote the more intense the flavour and thicker the consistency. Sweeten with honey if it’s too sour for your child’s liking. Prep time: 5 mins. Cooking time: 30 mins. Makes: 11/4 cups Blueberry Vanilla Compote INGREDIENTS 2 medium-sized red apples, peeled, cored and cubed 1 cup (160g) frozen blueberries 1 vanilla pod, insides scraped out or 1/2 tsp vanilla extract 1/2 cup (125ml) filtered water EQUIPMENT blender Serve on it own, add to Bircher Muesli (see page 257) or porridge or as a topping for Pancakes (see page 51). V Vegan Nut Free Gluten Free Serving and storing leftovers: Serve immediately, store in a jar or in an airtight container in the fridge for up to 2 weeks or freeze for up to 4 months. INSTRUCTIONS Place all ingredients in a medium-sized pot and bring to a boil. Turn heat down and simmer for 25 mins or until all water has evaporated. Put into a blender and blend until smooth and creamy.
